What we stand for
The San Francisco
Croissanicle Manifesto
We hold these truths to be self-evident: that all croissants are not created equal.

San Francisco deserves to know where the good croissants are.

Not the most Instagrammed croissants.
Not the croissants with the longest lines.
Not the croissants some national magazine parachuted in and declared the best.

The good ones.
The ones that shatter when you bite them. The ones with impossible layers and cavernous honeycomb interiors.
The ones that leave butter on your fingers and flakes absolutely everywhere.
The ones worth missing the bus for.
The ones worth crossing this 7x7 mile town for. Or, maybe, gasp, crossing the Bridge for.

We believe finding those croissants is a matter of public interest.
So we're eating our way through San Francisco, one bakery at a time. We buy anonymously. We photograph the evidence. We sound-record the bites. We inspect the lamination. We score the flake. We assess the butter. We document the findings.

No freebies, no hype, and no mercy for bad lamination.
Just a necessarily rigorous pursuit of pastry excellence.

Because life is short. Butter is expensive. And nobody should waste a Saturday morning on a mediocre croissant.

The San Francisco Croissanicle.
All the flakes fit to print.
